Homemade Chocolate Ice Cream….tastes like Wendy Frosty

My friend Susan told my sister and I a yummy, easy ice cream recipe that I thought we’d try for Father’s Day.  You need 16 ounces Cool Whip, 1 (14-ounce) can sweetened condensed milk, and 1/2 gallon chocolate milk.   I had a 1/2 gallon milk already in my refrigerator so I just added chocolate syrup.   I mixed the sweetened condensed milk and cool whip in my kitchen aid.   I then added everything into the ice cream maker”s freezer container.    Then let the ice cream maker do it’s job (with the salt & ice of course).   It was a big hit.

Pumpkin Pie Blizzard

I love checking out the Happy Housewife’s site when I have time and I get her facebook posts.  I was really excited to see this one.  Can’t wait to try with my family.   Check out her site and the copycat pumpkin pie blizzard recipe here.

Easy Peach Cobbler

8-10 peaches, peeled & sliced

2 cups sugar, divided

½ cup water

1/2 cup butter

1 ½ c self-rising flour

1 ½ c milk

Ground cinnamon

Preheat oven 350.

Combine peaches, 1 cup sugar and water in a pan. Stir. Bring to boil and simmer for about 10 minutes then remove from heat. Meanwhile, put butter in 9×13 baking dish and place in oven to melt butter. Remove from oven.

Mix 1 cup sugar, flour and milk. Pour over butter but do not stir. Put fruit and syrup atop. Sprinkle with cinnamon. Bake for 30-45 minutes.

This went fast at my house and is one of my mom’s favorite desserts that I make her.

BTW, my cobbler went too fast to get pictures so while searching a cute picture to put I found this old postcard.  Didn’t try the recipe but looks good and fast if you don’t have fresh peaches like we do.

December 31, 2010

Last day of the year 2010.  I cannot believe it.  It’s been a busy day and the year passed truly in a blink.

My husband and I ate out for brunch.  We go out twice a month on grocery shopping day and this was it.  Dinner was snacky foods:  pizza, chicken nuggets, sausage balls and chips.  Makes it like a party for the kiddos.  Made 3 x the sausage balls recipe today because of Rusty’s work party and the peanut butter buckeyes.  Enjoy :D!!

Sausage Balls

  • 1 tube sausage
  • 2 refrigerated crescent rolls
  • 1 block of cream cheese

Cook the sausage in a pan then add the cream cheese.  Refrigerate for a bit.  Then unroll the crescent rolls and each triangle into thirds.  Put a teaspoon into each crescent roll.  Bake 375 for ~10 minutes.

Buckeyes

  • 1 1/2 c peanut butter
  • 1 c butter, softened
  • 6 cups powdered sugar
  • 1/2 t vanilla
  • 4 cups milk chocolate chips

Put the peanut butter, butter, powdered sugar and vanilla together.  Use a wooden spoon to stir together well until you can form small teaspoon size balls.  Place on wax paper on a cookie sheet and place in the freezer for 15-20 minutes.  (You can put toothpicks into the balls before you freeze to make easier to handle in the chocolate but we used our small s’mores skewer instead).  Next, heat chocolate chips in double boiler. Dip the balls into the chocolate.   Place chocolate balls on a cookie sheet lined with wax paper and put into freezer for 2 hours.  Voila – yumminess.
